- 1 lb chicken thighs (boneless, skinless - cut into strips)
- 3 bell peppers (we use red, yellow and orange - cut into strips)
- ½ large yellow onion (cut into strips)
- ½ teaspoon chili powder
- 1 teaspoon cumin
- 1 tsp paprika
- 1 teaspoon garlic (minced)
- 1 teaspoon oregano
- ¼ cup cilantro (chopped)
- 1 chipotle pepper (finely chopped)
- 1 lime (zest & juice)
- 2 Tbsp olive oil (extra virgin)

Preheat your oven to 400 degrees F (205 degrees C). Spread the sliced bell peppers, onion, and chicken on a large baking sheet. Sprinkle seasoning over chicken, peppers and onion: chili powder, cumin, paprika, garlic, oregano, cilantro and chopped chipotle pepper.
1 lb chicken thighs, 3 bell peppers, ½ large yellow onion, ½ teaspoon chili powder, 1 teaspoon cumin, 1 teaspoon paprika, 1 teaspoon garlic, 1 teaspoon oregano, ¼ cup cilantro, 1 chipotle pepper

Zest the lime over your ingredients, then drizzle with olive oil. Toss all of the ingredients to coat with seasoning and olive oil, then squeeze the lime juice over the fajita mix. (optional) Toss your ingredients again, then spread evenly on your baking sheet.

Place your baking sheet of fajita mix into the oven and cook for 20 minutes. Remove from the oven, move your fajita mix to one side and place your desired number of tortillas in the remaining third of your baking sheet.

Return to the oven and cook everything for an additional 5 minutes. Serve immediately.
